奶油血斗牛是什么东西?
“Crema de Lidia, 西班牙的奶油血斗牛” 这是《神探夏洛克》里的一个菜品,由华生医生推荐,味道描述是 “It is a very old recipe for cream of liver and onions. I have eaten it in Spain and it was very good, but it does not come from London or even England. It sounds like the sort of thing that might be made by Eliza at home in her own kitchen.”(这是一个很老的肝膏炖洋葱的做法。我在西班牙吃过,很不错,但并非出自伦敦或英格兰,听起来倒像是由伊莱扎在家里厨房里做的菜) 我曾经在巴塞罗那的一家餐厅吃到过这道菜,那个餐厅的招牌菜就是烤鳕鱼配这道菜。
关于这个菜的来源,我看过一种说法是:在18世纪,法国和英国开始盛行捕猎马儿,当时的人们认为吃马肉是一种高贵至极的享受 (the notion that eating horsemeat was an elegant luxury),于是有些厨师就开始研究怎么做马肉好吃(cuisiniers began to experiment with various ways of preparing horses' meat)。
其中有一种做法是用牛奶和面粉把马肉腌熟了再煎熟,然后配上豌豆一起炒。不过,我觉得这种做法跟《神探夏洛克》里写的非常不一样……
